Vegetarian Italian: Mangia with Marco Muda

Marco’s passion for cooking with the seasons certainly tastes good to us.
 

Growing up in La Spezia in the northwest coastal region of Italy, Marco has fond memories of enjoying the bounty of fresh ingredients, simply prepared. For the first installment of Nibble Summer cooking, we’ll be spending an evening preparing a northern Italian staple: risotto. Marco’s propensity for experimentation (he’s a biochemist by trade) will have our class expanding its understanding of risotto. We’ll use different grains beyond arborio rice, and tap into some unheard of but delicious combinations: black rice with Prosecco; sliced strawberry with brown rice; and a classic mushroom and herbs with farrow. For starters, we’ll draw our inspiration from the farmers market, and will have a simple vegetable carpaccio to kick things off. A pairing of grilled radicchio with scarmorza cheese will accompany our meal. This is a class for any Italian cuisine enthusiast interested in learning the proper technique to make perfect risotto. This class will be keeping it light, healthy, and above all: vegetarian. Mangia!
