That’s right folks, Nibble star Estela Calzada is back with a class of legendary origins. We’ll start off by preparing a fresh Mexican yam bean salad, more commonly known as Jicama. Indigenous to the Americas, this crispy and water filled root makes a cool and refreshing starter dressed with lemon, cilantro, pineapple, and spicy chili pequin. Afterwards, we’ll dive right into the coveted Huitlacoche. Known throughout Mexico as the “caviar of the Aztecs” this corn fungus has a mushroom like texture with woody, savory, and sweet flavors. The Aztecs were the first to enjoy hongo de maiz, and today the price of huitlacoche is more expensive than unaffected corn. We’ll make both tostadas and quesadillas with Huitlacoche and queso fresco. Wash it down with Agua de Nopal, cactus juice, and top it all off with a homemade Mexican postre.
